Meet Our Expert Speaker
Dr. Mark Morgan

is a professor of food engineering and Extension Specialist in the Food Science Department at the University of Tennessee.  He joined UT in 2013 after 21 years as a faculty member at Purdue University.  Dr. Morgan is a process engineer with experience in the areas of thermal processing, aseptic processing and storage, hygienic design of equipment, sanitation, and environmental monitoring.  His research has focused on chlorine dioxide and ozone gas applications for sanitizing equipment and facilities for food processing. Since 2019 as an Extension Specialist, he assists equipment manufacturers with hygienic design, teaches Preventive Controls for Human Foods and Better Process Control School courses, assists processors with food safety plans, and consults with industry on food safety and microbiological issues in their production environment. He is also as a process authority for many food entrepreneurs and assists them in process development and meeting FDA regulations for acidified foods.
